Acquolina is part of the Aspen Hospitality Group family, alongside sister restaurants Duemani and Angelo's — three distinct concepts within a couple of blocks of each other in the heart of downtown Aspen. While Duemani leans coastal mediterranean and Angelo's leans Northern Italian, Acquolina holds down the classic trattoria and pizzeria lane: warm, lively, and centered on the kind of cooking that doesn't need reinventing.
In the kitchen, Neapolitan chef Vincenzo Salvatore carries that tradition forward with house-made pastas, wood-fired pizzas, and regional dishes rooted in real Italian technique — the kind of food meant to be shared over a long table and a longer conversation. Above it, wine director Darko Petrov oversees one of the most extensive wine lists in the valley, backed by hand-crafted cocktails and, by local reputation, the largest spirits selection in town.
